The University of Nicosia is seeking an organised and detail-oriented Protocol Cook / Research Kitchen Coordinator to operate our research kitchen. This role combines professional culinary skills with scientific precision, preparing reproducible meals for nutrition research and controlled dietary intervention studies.
Key Responsibilities:
- Prepare meals according to detailed scientific protocols, ensuring precise ingredients, weights, preparation methods, and serving conditions.
- Execute controlled food experiments and prepare standardized samples for research.
- Maintain complete documentation, ingredient traceability, and preparation records.
- Source ingredients, manage inventory, and ensure compliance with food safety and quality standards.
- Collaborate closely with nutritionists, clinicians, laboratory scientists, and AI specialists to translate research protocols into practical, high-quality meals.
- Contribute to the development of standard operating procedures and continuous improvement of the research kitchen.
Qualifications:
- Professional experience in a restaurant, catering, hotel, production kitchen, or private chef environment.
- Excellent organisational skills and attention to detail.
- Ability to follow written procedures with consistency and precision.
- Strong knowledge of food hygiene and allergen management.
- Fluency in Greek and good working knowledge of English.
Preferred Qualifications:
- Culinary qualification and HACCP certification.
- Experience with recipe standardisation, nutrition-focused cooking, or quality assurance.
- Interest in food science, precision nutrition, and experimental cooking.
A life sciences background is not required—professional culinary expertise, reliability, and a commitment to accuracy are what matter most.
